Ingredients:
1 cantaloupe, seeded and cubed
1 cucumber thinly sliced
1 red bell pepper, thinly sliced
1/2 large red onion, thinly sliced
3 tablespoons apple cider vinegar
1/2 teaspoon ground black pepper
1/2 teaspoon salt
Fresh mint leaves (optional)
Instructions:
Place ingredients in a large bowl. Add apple cider vinegar, salt and pepper and mix well to coat. Cover and set in the refrigerator for an hour to marinate, mixing occasionally. Salad can be served chilled or at room temperature. Sprinkle mint leaves on top before serving.
