Radish Micro Bites

 

Radish Microgreen Vegan-balls

Ingredients:

 

3 Tbsp olive oil

20 oz chopped mushrooms

½ cup chopped onions

1 Tbsp garlic powder

1 cup radish microgreens, chopped

2 eggs

1 cup old-fashioned oatmeal

1 cup Italian seasoned breadcrumbs

¼ tsp salt

½ tsp pepper

 

Instructions:

In a large skillet, heat the olive oil on medium-low heat and sauté the onion for about 5 minutes. Add garlic powder and the mushrooms while increasing the heat to medium-high, cook for 10-15 minutes until the water evaporates. Transfer to a food processor bowl to cool. Add the radish microgreens, eggs, oatmeal, breadcrumbs, salt and pepper and chop the mixture for a few pulses to blend. Leave the lid on the food processor and store in the refrigerator overnight to allow the texture and flavors to fully develop. When ready to cook, preheat the oven to 400 degrees. Use a tablespoon to measure and help form small balls from the mixture. Bake for 15 minutes.

 

Note: These would be delicious added to an Alfredo Sauce or other favorite pasta sauce.
